Wilted Kale with Golden Shallots

Our AmeriCorps VISTA Volunteer Erica Bondy submitted this recipe. It comes from the blog “My Recipes”. 

Yields: 3-4 servings

Ingredients
1 large bunch of kale, stemmed and chopped (any kind of kale)
2 sliced shallots
1/4 t. salt
1/4 t. black pepper
2 T. Olive oil
2/3 c. unsalted chicken stock

Preparation 
1. Heat a cast iron pan over medium heat. Add olive oil; swirl to coat.

2. Add sliced shallots; cook 5 minutes or until golden, stirring frequently.

​3. Add kale, salt, pepper to pan; cook for 2 minutes. Add chicken stock; cover and cook for 4 minutes or until tender, stirring occasionally.
