Makes 4-6 servings
Ingredients 1 1/2 pounds carrots, grated Juice of 2 oranges Juice of 1 lemon 2 T. olive oil Salt and pepper to taste 1 t. ground cumin, optional, to taste Preparation Grate carrots with grater or food processor. Combine the other ingredients, toss with carrots, and serve.
