Serves 4-6 Ingredients 1 T. canola oil 1/2 cup shredded carrots 1/2 medium onion, diced 1 t. chopped fresh ginger 1 t. chopped garlic 1 1/2 mild yellow curry powder 1/2 t. ground cumin 1/4 t. ground cinnamon 2/4 cup vegetable broth 1 T. freshly squeezed lemon juice 1 large head of cauliflower. Grated 1 cup finely sliced spinach leaves Salt and pepper Preparation In a large pot, heat the oil over med-high heat until shimmering. When hot, sauté the carrots, onion, ginger, and garlic until they being to soften, 2-3 minutes. Stir in the curry powder, cumin, and cinnamon. Add the broth and lemon juice and cook, stirring gently to prevent the vegetables from sticking to the bottom of the pan. Add the grated cauliflower and season to taste with salt and pepper. Stir well to incorporate all the ingredients. Cover and let cauliflower steam for 7 to 8 minutes, stirring often Fold the spinach into the cauliflower, and immediately serve the vegetables. Do not let the spinach cook, the heat from the cauliflower will wilt it enough.
