Just raw veggies and a blender! “Quick Vegetarian Main Dishes”.
Yields: 4 servings Ingredients Soup: 2 medium cucumbers, peeled and seeded 4 onions with tops 1 1/2 cups vegetable broth 1 cup frozen peas 2 garlic cloves, peeled 3 limes 1 avocado, peeled and pitted 1/4 t. salt 1/8 t. coarsely ground black pepper Relish and Garnish: 1 small red bell pepper, sliced into 1/2 inch pieces 2 green onions with tops, thinly sliced 1 can black beans, drained and rinsed 1 garlic clove, pressed 1/4 t. salt 1/8 t. coarsely ground black pepper 1/4 cup sour cream Preparation 1. Blend cucumbers, onions, broth, peas, and garlic using a blender or food processor until smooth. 2. Add 5 T. of lime juice, avocado, salt, and pepper. Cover and blend until smooth. 3. Toss together onions, bell peppers, beans, pressed garlic, 2 T. lime juice, salt, pepper and sour cream.
