Easy peasy lemon squeezy! :)
Serves 4 2 medium beets, cooked 2 potatoes, cooked 1 t. mustard 1 T. olive oil 1/2 lemon Vinegar Salt and pepper Peel the beets and cut them in strips. Place them in a bowl and sprinkle them with vinegar and the lemon juice. Let it sit for an hour. Peel the potatoes and cut like beets. Add them to the bowl. Add the olive oil, the mustard, salt and pepper. Mix and serve.
