Not a fan of mayonnaise? Neither are we, here is slaw without it.
2 1/2 c. finely shredded red or green cabbage
1 c. grated carrots
1/2 c. diced or julienned red or green bell pepper (optional)
2 T. oil
2 T. rice vinegar
1 T. soy sauce
2 t. brown sugar
1/2 t. grated fresh ginger root
Dash of chili sauce, Tabasco, or other hot pepper sauce.
1/2 c. chopped peanuts, or 1 T. toasted sesame seeds (optional)
Combine veggies in a serving bowl. Whisk together dressing ingredients and toss with vegetables. Marinate 15 minutes.
