Prep time: 15 minutes Cook time: 30 minutes Yields: 12-15 cakes Ingredients 6 medium size potatoes- grated 1 leek finely chopped herbs- mint, thyme, sage and chives, finely chopped (or basil if you prefer) 1/2 cup grated cheese salt and pepper to taste Instructions 1. Preheat your oven to 350 F and grease a muffin pan well. 2. Use the food processor to finely chop the leeks, herbs, and garlic. 3. Grate the potatoes and combine with the leek and herbs in a large bowl. 4. Season with salt and pepper. 5. Spoon the mixture into the muffin pan, filling each space half to 3/4 full. 6. Bake in oven for 30-40 minutes or until the top is golden and crispy.

Spicy Thai Cucumber Salad
Yields: 4-6 servings Total time: 15 minutes Source: http://onelittleproject.com Ingredients For the salad: 2 seedless cucumbers 2 large carrots 3 green onions 1/4 cup peanuts For the dressing: 1/3 cup rice vinegar 1 tsp. sesame oil 1/2 tsp. red pepper flakes 2 Tbsp. sugar 1/2 tsp. salt Instructions 1. Spiralize the cucumbers. Cut the carrots into thin julienne strips. Thinly slice the green onions. Chop the peanuts. 2. Mix the dressing ingredients together in a small bowl, and whisk until well combined. 3. Add the chopped vegetables to a large salad bowl. (Save some green onions and peanuts for garnish) 4. Pour the dressing over top and toss to combine. 5. Garnish with extra chopped peanuts and green onions. 6. Serve immediately. |
