Cook time: 20 minutes Yields: 4-6 servings Ingredients 8 traditional lasagna noodles, cooked and drained 1 egg 1 container ricotta cheese 2 Tbsp. Italian seasoning 1/4 cup Parmesan cheese 2 cups loosely packed fresh spinach 2 cups loosely packs fresh arugula 2 Tbsp. olive oil 1 tsp. black pepper 2 cups marinara sauce 2 cups mozzarella cheese, shredded Instructions 1. Cook lasagna noodles according to package directions; drain and immediately lay on a non-stick baking sheet. 2. In large bowl, combine the egg, Italian seasoning, ricotta cheese, and Parmesan cheese. In a separate bowl, combine the spinach, arugula, olive oil, and pepper. 3. To prepare lasagna roll-ups, spread each lasagna noodle with 2 tablespoons of cheese filling. Top with a handful of spinach arugula mixture [about ¼ cup each roll-up]. Roll up each noodle starting at one end. Repeat until all noodles have been filled and rolled. 4. Pour ¼ cup of marinara sauce over each roll-up and top with ¼ cup of mozzarella cheese. 5. Bake at 375, uncovered, for 20 minutes. Serve immediately. This recipe comes from www.wineandglue.com and yields about 18 muffins. Ingredients 1 1/2 cup granulated sugar 2 eggs 1 cup oil 3 cups flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon cinnamon 1 cup shredded zucchini (about half a medium zucchini) 1 cup shredded carrot (about two carrots) 1 cup shredded apple (about one apple) Instructions 1. Preheat the oven to 350 degrees and line a muffin tin with cupcake liners. 2. In a large bowl, mix together the sugar, eggs, and oil. 3. In another large bowl whisk together the flour, salt, baking soda, and cinnamon. Slowly add the flour mixture to the sugar and egg mixture. The batter will be very thick. 4. Mix in the zucchini, apple, and carrot. 5. Fill the muffin tins 2/3 full. 6. Bake for 20 to 25 minutes or until the muffins are golden brown and a toothpick stuck in one of the middle ones comes out with a crumb or two. |
